CILENTO

The area south-east of Salerno to the regional borders with Basilicata and Calabria is known as the Parco Nazionale del Cilento e Vallo di Diano. The World Wide Fund for Nature has a wildlife sanctuary, the Oasi Naturalistica di Persano, about 201 m north-east of Paestum on the Sele river. It is one of the few protected natural environments in southern Italy. Consisting mainly of wetlands, it is home to a wide variety of birds. The sanctuary is open from September to April and signs direct you there from the S 18.

• 2 cups blanched ground almonds
